Vegan Black Bean Pasta

Raise your hand if you love pasta. Entire room of hands goes up- duh. Im always on a mission to create healthy versions of my favorite cheats- spaghetti with meatballs definitely being one of them. Now, I dont eat animal protein, so I will be using a plant based meat substitute, but you can easily make this with ground turkey. The best part though of course, is that I will be swapping out flour pasta, which holds zero nutritional value, and is loaded with empty simple carbs, for black bean pasta. Which will pack double the protein and 650 percent more fiber than regular flour pasta noodles. SIGN. ME. UP.

 

Note: NO, this will not taste exactly like pasta. But I think its an amazing alternative, and very filling and nutrient dense. And thats what counts, right?

INGREDIENTS:

1 Bag Organic Black Bean Pasta - I use Trader Joe’s Brand

1 Jar of Pasta Sauce- I love RAO’s Arrabbiatta

1 bag Beyond Meat Beef Crumbles

3 Cups raw kale

 

Simply follow the instructions on the pasta, to cook that first.

I cook my pasta sauce on low heat while cooking my pasta.

Follow the instructions to cook the beef crumbles in another skillet.

Lastly, sauté the raw kale in another skillet. Pour 1 TBSP avocado oil in the skillet, along with seat salt and pepper, on high heat, to coat the entire pan. Add the kale, tossing it with tongs until all o the kale is covered in the oil, sauté for 3-5 minutes.

 

Top 1 cup of pasta with 1/2 cup pasta sauce and 1/2 cup beef crumbles. Serve Kale on the side or mixed in.
